Goat cheese & cherry crostini

Ingredients

  • 1 baguette, sliced diagonally

  • olive oil

  • 1 quart cherries, pitted and sliced in half (I prefer Rainer-type cherries for this recipe)

  • 1 approx. 10 oz log of chevre goat cheese (Feel free to swap this with another type of cheese! A sharp white cheddar would be delicious.)

  • honey

  • salt (flaky sea salt is my favorite, but any will work!)

  • Optional: sliced green onion

Instructions

  1. Preheat oven to 400 degrees. Arrange baguette slices on a baking sheet and brush the tops lightly with olive oil. Bake for 8 minutes, or until golden. (I prefer them a little softer.)

  2. Remove crostini from the oven and allow to cool for 5-10 minutes.

  3. Spread a generous layer of goat cheese on the crostini. Top with sliced cherries, a drizzle of honey, and a sprinkle of salt. Garnish with sliced green onion if you’d like.
