nopales

Nopales are edible cactus paddles harvested from plants in the prickly pear family. They taste similar to asparagus and okra, and, also like okra, are crunchy with a characteristic mucilaginous/slimy interior that’s great for thickening stews. Not often grown locally, we are grateful to source greenhouse-grown nopales from Cooperativa!

preparation & uses

After washing, lay the nopales paddles on a cutting board, scrape off the spines, and cut off the edges.

Nopales are great sauteed, grilled, in tacos and eggs, and incorporated into stews. They are most commonly eaten cooked but can be prepared raw.
